Smoked Fresh Mozzarella

We smoke our mozzarella in a new custom built 24 guage stainless steel cold smoker which is 100% USDA approved. An electric smoke generator smolders dampened cherry wood chips and smoke goes into the smoker via a three-inch line with a low speed fan, which creates a more delicate flavor without a thick skin.

Fresh cheese is held in the smoker for approximately 2½ hours after which it is wrapped and refrigerated. Our cheese is handmade and smoked on the smae day for ultimate freshness. We do not stock our cheese andit is made to order.

We are excited to announce our Cherry Wood Smoked Mozzarella placed 3rd in the judging and competition at the 2007 American Cheese Society Conference.

This is a 100% Vermont product, made with whole milk from cows that are rGBH free. When you buy this product, you are directly helping to support small dairy farms of Vermont.

N.B. This mozzarella freezes very well. Thaw in refrigerator overnight.
